Husband and wife owners Leigh Ann Tona and Zach DeLong met when they both ran food trucks in Wilmington (the most meet cutes of meet cutes). After deciding to go into business together and pivot to the brick and mortar route, Sleeping Bird Coffee opened in 2021. They (mostly Zach) experimented with handmade brioche doughnuts and the popularity quickly took off with existing customers. When they had the opportunity to open their own doughnut shop, they jumped on it! The new shop will feature those same homemade brioche doughnuts as well as new options such as the classic glazed and old fashioned style cake doughnuts
